Afrina Messolonghi, the highest quality salt, the gourmet salt, the salt flower (fleur de sel).
Afrina is what the Mesolonghians call the salt flower. The fine, unprocessed, superior quality salt, which is collected by hand, using special wooden tools and a special technique. During the drying of the lagoon’s seawater by the sun, salt clusters, which resemble foam, are formed around the perimeter. Afrin is the first salt to be harvested from the salt marshes.
The name salt flower comes from the shape of the salt crystals, which look like flowers.
A Greek product of high nutritional value, rich in minerals and trace elements salts – such as iron, zinc, magnesium, iodine, calcium, potassium, copper and fluoride – many more than other types of salts, and a higher percentage of sodium chloride than common salt.
It is used at the end of the cooking process, sprinkled when the dish is ready and served, as a garnish to enhance the taste of the dish, savoury or sweet.
