The Messolonghi people call the flower of salt Afrina. The fine, unprocessed, superior quality salt, which is collected by hand, using special wooden tools and special technique. During the drying of the sea water of the lagoon from the sun, perimeter salt clusters are formed, which look like foam. Afrina is, that is, the first salt that will be collected from the salt pans.
The name salt blossom comes from the form of salt crystals, which look like flowers.
High nutritional value Greek product, rich in minerals and trace elements – such as iron, zinc, magnesium, iodine, calcium, potassium, copper and fluoride – much more than other types of salts, and a higher percentage of sodium chloride than common salt.
Used at the end of the cooking process, sprinkling when the dish is ready and served as a garnish to enhance the taste of the dish, savory or sweet.
